Direct to press, fermented in tank for twenty days, then transferred to neutral oak barrels for secondary fermentation. Aged in neutral oak barrels for 9 months. Similar to the Cab Franc, this is a great Chenin to begin with, All too often Chenin is associated with sweeter French Vouvray, rarely seeing the drier side. For a new world Chenin, there is that similar fresh, oceanic minerality; walking, talking sea shells with an attitude, a little warmth and compactness. A white wine that fits perfectly in the middle of the flavor spectrum, making it what we call in the wine business, a white wine that drinks like a red. The natural quality sees it's part here a little bit more than in the red with a bit of skin contact ,not quite an orange wine but you could tell there is something there with it's quasi marshmallow and slight almond smelling nose. It is tranquil and pleasant where one needs it to be, but never lacking in seriousness.
