All parcels were harvested separately, de-stemmed and chilled then were cold soaked for 3 days. Fermentation took place in both stainless and old oak open top ferments with pump-overs and punchdowns conducted twice a day. After 10-14 days on skins, the individual ferments were pressed off at the optimal tannin level where they were left to finish off both primary and malolactic fermentation. To maintain the bright fresh fruit character, a combination of old oak and stainless steel were used for maturation as individual components for 3 months prior to blending.

From heavy soils at high elevation in New South Wales, this wine blends six varieties, including Sangiovese, Barbera, Pinot and Tempranillo. There's a bit of funk on the nose at first but it quickly blows away to reveal lovely brambly berry fruit, plum, violet, earthy spice and whispers of iodine and warm stone. The palate is equally lovely. There's power but restraint. Textural, with fine tannins, the wine gives the fruit and place room to shine.

A touch of dark chocolate mingles with black cherry, blackberry, spiced plum and sage flavors in this red, with muscular tannins firming up on the finish. Shiraz, Sangiovese, Petit Verdot, Barbera, Pinot Noir and Tempranillo. Drink now. 3,000 cases made, 250 cases imported.
