The label of the NV Cuvée Extra Brut now mentions Valle de Uco, which is where the grapes are sourced. It's a blend of 75% Pinot Noir and 25% Chardonnay with six grams of acidity and was kept with the lees in bottle for 24 months. It feels more complex and harmonious, with better integrated bubbles yet lacking a little liveliness in the finish. 35,000 bottles.
Yeasty apple aromas are mature and briny. This extra brut carries heavily brined flavors of sauerkraut and pickled cucumber that finish flat.
