Grappa Is Exclusively An Italian Product Produced By Distillation Of The Lees Of The Wine (Fermented Skins). Its Origins Are Found In The 16 Th Century, And Piedmont Is One Of Italy 'S Region With The Longest Tradition Of Production. Over Time, We Have Modified Our Production Process From Simple Stills Heated Over A Direct Flame To Those Using Steam And A Bain-Marie (Double Boiler) Process, Like The Caffey Still. Our Grappas Are Distilled In Small Copper Stills Using A Bain-Marie Or Irregular Steaming Process. These Methods Are Slow And Costly But Result In Gentle Grappas Which Retain The Characteristic Of The Varietals From Which They Are Produced. A Fine Grappa Is Critically Dependent On The Distillation Of Fresh Lees. Our Attention To This Criterion And The Design Of Our Distillation Facility Allow Us To Complete The Process Within A Few Days After The Completion Of Fermentation. Super Grapes And The Extraordinary Skill And Meticulous Care Of Our Master Distiller Yield Very Delicate Grappas Of Fine Varietals Typicity.
