Elderton Cabernet Sauvignon 2013

Elderton Cabernet Sauvignon 2013

SKU 51095

The 2013 growing season was hot and dry with low crops allowing great varietal expression. The grapes from our Estate were picked and crushed into our concrete open fermenters, having a 24-hour cold soak before inoculation. Heading down boards were utilised after two days to keep the cap submerged, making finer tannin extraction without harsh phenols. Splashing-over of the wine helped increase oxygen and circulation through the skins. The wine was then pressed to French oak barrels for malolactic fermentation and racked three times over the next 18 months, before final blending and bottling. The 2013 shows the classic Barossa Cabernet characteristics of blackberries, cassis and beetroot earthiness and is drinking well today but will cellar well for 10+ years.

Wine SpectatorThis red is appealing for the open-knit texture and juicy wild strawberry and blackberry flavors, accented by freshly ground black pepper and sage notes that mingle on the finish. Drink now through 2026. 400 cases imported.

Wine AdvocateDeep garnet-purple, Elderton's 2013 Estate Cabernet Sauvignon presents warm blackcurrants and plums on the nose accented by touches of pencil lead and dried herbs. A nice backbone of chewy tannins and good acid freshness offsets the richly fruited palate through the long finish.
