"Les Vaucopins" premier cru asserts itself firstly by its attractive pale yellow colour with soft honeysuckle reflections. Ithas an expressive and rather powerful mineral-dominating nose. Milk caramel notes combine with an elegantly fine andoaky aroma. On tasting, an impression of sweetness is detectable; crystallised fruit, apricot, and quince. This beautifullyfull wine gives way to an ample and finely acidic finale.Serving suggestionsThe varied and sustained aromatic pallet of this great wine allows a double vocation. As an aperitif, it can be servedaccompanied with finely-sliced Parma cured ham or a "Pata Negra" Spanish Serrano ham.For a convivial meal, serve with the flavours of a sea bass carpaccio seasoned with olive oil and artichoke mousse, orwith a snail pastry with garlic cream.

Wine EnthusiastA tight and closed wine from the southernmost premier cru, this is still developing. As it fills out, it will bring in the apple ripeness and fresh character that are just a hint at the moment. It will certainly remain structured and nervy with a strongly steely aftertaste.
