Grapes are vinified separately until time for the final blending and bottling. The must is macerated in temperature controlled stainless steel vats for 12-15 days and then aged for 12-14 months in a combination of new and used oak casks.

Wine AdvocateThe 2013 Mouin-à-Vent Vieilles Vignes has a forward and slightly "glossy" nose with maraschino cherries mingling with strawberry and a splash of soy. The palate is medium-bodied with a sweet entry and good depth in the mouth; however, it is missing the complexity of Aviron's best wines, and it feels a little monochromatic on the finish. Drink over the next 4 to 5 years.
